  • 70 to 80 grams cane sugar (regular white sugar works perfectly)
  • 1 litre filtered water (no tap water with chlorine)

Equipment:

  • Glass jar (1.5 litre capacity minimum)
  • Breathable cloth or coffee filter
  • Rubber band
  • Wooden or plastic spoon (never metal touching SCOBY)
  • Pot for boiling water

Follow these steps exactly for your first successful batch.

Step 1: Boil 500ml of filtered water in a pot.

Step 2: Remove from heat. Add tea bags or loose tea. Steep for 10 to 15 minutes, then remove the tea.

Step 3: Add sugar to the hot tea. Stir until completely dissolved.

Step 4: Add the remaining 500ml of cool filtered water. This brings the temperature down faster.

Step 5: Let the sweet tea cool to room temperature. This is critical. Hot liquid will kill your SCOBY. The tea should feel neutral to touch, not warm.

Step 6: Pour the cooled sweet tea into your clean glass jar.
