Which milk for kefir in Pakistan? Buffalo, loose milk or packet milk

Boiled and cooled full-cream milk, cow or buffalo, is the safest everyday choice for milk kefir in Pakistan. Packet (UHT) milk can work for a batch or two as a backup, but it is not what we would feed your grains every day.

Your milk choices at a glance

MilkHow it works with kefirOur advice
Loose (dairy) milk, boiled and cooledWorks well once it has been boiledA good everyday choice. Boil it and cool it below 30°C before the grains go in.
Pasteurised milk from the fridgeThe milk most commonly used for kefirA good everyday choice. Choose full-cream.
Packet (UHT) milkWorks for a batch or two in many kitchens, though some suppliers call UHT milk unsuitable for culturingKeep it as a backup. Use boiled or pasteurised milk for daily feeding.
Buffalo milkVery rich, so the kefir is very thickFine. Thin it with a little cow’s milk or water if you want it pourable.
Cow milkThick, smooth kefir. The most popular choiceFine.
Goat milkA thinner kefir than cow milkFine if you like it thin.
Low-fat or skimmed milkWorks, but the kefir is thinnerUse full-cream for the best result.
Flavoured milk and tea whitenersAdded sugar, flavours and stabilisersAvoid.
Lactose-free milkMay not work: little or no lactose is left for the grains to feed on, and much of it is ultra-heatedAvoid for daily use.
Plant milksMilk kefir grains need animal milk. Coconut milk can work if the grains are refreshed in animal milk every few days; nut and seed milks give inconsistent resultsFor a dairy-free drink, make water kefir instead.

Why we boil loose milk

Raw milk can carry harmful germs, including Salmonella, E. coli, Listeria, Campylobacter and Brucella, and the US Centers for Disease Control and Prevention advises pasteurised milk. Pasteurising means heating milk to about 72°C for 15 seconds. Bringing loose milk to a boil takes it well past that, and it is the usual habit with loose milk at home. Boiling also removes the milk’s own bacteria, which could otherwise compete with your grains.

How to boil and cool milk for kefir

  1. Bring the milk to a boil in a clean pan and let it bubble for a minute.
  2. Take it off the heat and let it cool until it is lukewarm or cooler. Check with a thermometer that it is below 30°C, or wait until the pan feels cool to the hand.
  3. Pour it over the grains in a clean glass jar. Never put grains into hot milk: heat stops them working.

Does the fat in the milk matter?

Yes. Whole milk gives a thicker, creamier kefir, and low-fat milk gives a thinner one. Buffalo milk is richer than cow’s milk, so its kefir comes out very thick. Many home brewers thin it with a little cow’s milk or water, or simply stir it before drinking.

Packet (UHT) milk: when is it fine?

Packet milk is easy to find and keeps for months, which makes it a handy backup when the dairy is closed or you are travelling. In many kitchens it makes kefir for a batch or two. Cultures for Health, a well-known supplier of kefir cultures, calls UHT milk unsuitable for culturing because it is heated to a very high temperature, so we do not recommend it for every day. Go back to boiled or pasteurised milk as soon as you can.

If you change your milk

A new milk, a new season or a new room can change how fast your kefir thickens and how it tastes. Give it two or three batches to settle. If it will not thicken, replace about an eighth of the fresh milk with finished kefir for a batch or two. More fixes are in Kefir grains troubleshooting.

How much milk do the grains need?

Use 1 to 2 teaspoons of live grains for up to 1 litre of milk. In winter you can use up to 1 tablespoon for every 500ml. The full method is in How to make milk kefir at home, and you can get grains here: Live Milk Kefir Grains.
